Makin' Chile with the Martinez's

The Recipe for Green Chile:

Ingredients: 4 lbs pork roast (pork loin sirloin), 1" cubed
1/4 lb of roasted chilies; or container of frozen chopped green chili
1 pkg dry onion soup

Picture4.JPG (157629 bytes)  Mix pork roast, diced, with 1 pkg dry onion soup.  Cook over med-low heat until done, about 1 hour.  Add 1/2 cup flour and mix thoroughly with pork, continuing the cooking process.  Add chopped chili and mix thoroughly, scraping bottom of pot.  Add water to cover; simmer while heating tortillas.

For Red Chili:  Picture3.JPG (81012 bytes)  Use this much dried red chili, about 10-20 pods.  Remove the stems.  Put in pot with enough water to steam until soft.  Blend chilies to liquid.  Add to meat and follow the above.

When the chili was ready we sat down and ate the best tasting chili this side of the Divide.
